10.4.2008 Smells like...CARCASS!

OK, first some important bubling about my- "again", music interests.. Carcass! They are coming Finland in this summer and they come to play reunion gig in Tuska-metal festival, here in Helsinki! Im so intereated to see them live(but havent got the ticket yet...I HAVE NO MONEY :( yet, but soon I will get it..). ANd today I visited in your new record store which was opened yesterday, and I notised I have enough money for only one record-only one!! There was so many good records!! I decided this Carcass-choise cuts compilation because I haven`t it yet(it was also cheap..) and I was thinking it maybe helps me a bit for this suffering cause of that long waiting for upcoming gig in summer.

Carcass are a British band formed by Napalm Death guitarist Bill Steer together with drummer Ken Owen in 1985. They are based in Liverpool. In 1987, bassist and vocalist Jeff Walker, formerly of the Electro Hippies, joined them, who grew up in the North East of England. Carcass have been a very influential band within the grindcore and death metal scenes. They disbanded in 1995, but will reunite in 2008. And we shall also notice that at in early days all of those guys were vegetrians and vegans! And I think some of them still are! Vegan, guttural and metal!
What could be any beter!!

This is a quote from one interwiew which Ken Owen tells a bit more:
"There's also talk that you guys were ironically vegetarian. Is there any truth to that?
KO: Yeah. Obviously, we had become vegetarians beforehand, but the vegetarianism and the death metal imagery we used in the lyrics is ironic, yes. "
...And inscribed for those guys I made this guttural, mushy, tasty vegan lasagna with nooch topping! It was awesome-and tasty looking like those carcass record covers....
This is one shot for my recent Autopsy buns, wiht some seitan salami and sundried tomatoes+ some news paper with interesting article about hard core punk+"Kilju"(=Finnish STRONG type of cheap, home made alcohol..Popular among those old school,HC-punks..).

5.4.08 Bread Autopsy

My latest bakings were been muffins, more muffins and-suprise! Some bread!
Those buns were born because I was thinking at I was craving some fresh, straight from owen and mouth stuff for the "side" of my seitansausageslices.
I decided to try spelt, rye and grahamflours for making those buns and also some dried paprika mince which gives nice colour and tastines in dough. I used also some soaking liquid for sundried tomatoes and that was a good decicion. I added sesame, pumpkin and flaxseeds in dough and also decorated buns with them before I bake them.
The outcome was really great! I was eating these so many, they matched really great with my spicy seitanish sausage slices ;)
Because this blog is also about my other interests than making some booring- buns I named those bunnie`s according one of my favourite deathmetal band: Autopsy! So those bakings were The Seedy-Surgery buns.
Autopsy`s Mental funeral- record suited well also in that baking proces and outcome was really "guttural".... Surgery begins!

30.3.08 Some "kitchen friends" and..Suprise

OK, I have been wery busy with my studies in recent weeks.

So, I haven`t posted anything new but I promise I`m coming to poting more cooking stuff in next week(I hope I will post in tomorrow if I just (again..)) have some time to do it.
But this is great begining of my postings. I have been cooking a lot of rcent times and also sometimes take some photos. But in this post you shall see my new (and not so new) kitchen companions.

That yellow one is lovely, miniature lemon tree which moved for sitting on our kitchens table about week before easter. It was such a love in first seeing,I like those yellow, bright colour of small, lemons.(Only "not-so-great" thing is that at they aren`t eatable sort of lemons..).

This is small "kotitonttu"(=Finnish "home elf" which lives usually in kitchen) which I find when I was grubbing one of kitchen cupboards. I was thinking "what? Who are you?" and this small "tonttu" just staring me for those little black, button eyes.. Well, I was thinking at he suits better to taking care of my "kitchen tree" than lurking from that cupboard. I named he "Yrjö" which is little "oldish" finnish mans name, but also means.. Vomit. But that elf is nice and not brings me any associations with..Vomit. Just Yrjö.

OK.. And this is my wery best( and oldest of those which I have mentioned in this post) kitchen friend, and also the wery best friend outside kitchen. Nelli. Shes lying on the flooor and looks..Hmm.. A bit bored? OK, she is N-O-T vegan, if she could decide she wants only eat meat and by products in every form avaible. But, sometimes I can fool her a bit-> She likes seitan! And hates oatporridge in every form(I love oat porridge with blueberry soup!) but thats another post...

And then the SUPRISE! This is not actually my "kitchen friend" but I like it a lot! MÄMMI! Again one of those strange finnish traditions. Mämmi is used to eat durin easter time, so I have been eating mämmi about 2 weeks now(and still have some in my fridge!). Mämmi is made from water, rye flour and powdered rye malt, seasoned with dark molasses, salt and dried, powdered Seville orange peel. The mixture is then allowed to go through a slow, natural sweetening process before being baked in an oven until set. Preparation takes many hours, and after baking the mämmi is stored chilled for 3 to 4 days before being ready to eat. Sometimes mild fermentation can occur during preparation.
Generally mämmi is eaten cold with either cream and sugar, vanilla sauce or vanilla ice-cream. It is also eaten spread on top of a slice of bread. I love to eat mämmi with Alpro`s vanilla soy milk! Heavenly afternoon snack! (and there is also my wery new, gorgeous VCtoW pictured in backround!!)

In this year I bought that organic mämmi with no added sugar. Its more better than those which have sugar added(but they aren`t bad!). I think mämmi is one of most devalued treats, but I think is the only idea why I shall "celebrite" easter(Is doesn`t have any religious mention for me, just eating mämmi and celebrating more like "spring is comin" feast).

But, because I haven`t post any recipe since my "Luumukiisseli"(another finnish tradition) I shall post recipe for preparing home made MÄMMI! (X-treme!!!)

FINNISH MÄMMI

Simple recipe
6 quarts (6 L)water
1 lb. (1 kg) rye malt
3 lbs (1.5 kg) rye flour
molasses to taste
1-2 tsp. salt
4 Tbsp. chopped orange rind

Mix 500 gm of malt with 1 litre of tepid water and put a thick layer of rye flour onto the surface. Cover, and leave it in a warm place for two hours. Sift the remaining malt and flour together. Uncover the pot, mix thoroughly and then add 1 litre of boiling water. Make another layer of malt/flour on the surface, cover the pot and again leave for an hour in a warm place. Repeat until all the ingredients are used. Finally add the salt and bigarade or orange zest and boil for 10 minutes, stirring well. Cool by whisking well and half fill moulds with the cooled mixture. Bake at 150°C (300F) for three hours.

OK. More is coming, keep forward: I have some easter candies, bakings, cookings which I`m coming to post.. Untill that keep on eating mämmi and enjoying your life!

20.3. Black goat`s sabbath- muffins with red evileye

Hello! This is long time since my last posting..
But I have done many things and I have also photographed them.
Those muffins are baked for one meeting which we have with our Wolf/large carnivore-action group. They were wery tasty and everyone in that meeting liked them!
I used this recipe from Tofy For Two: http://tofufortwo.net/2008/01/24/apple-pie-muffins/ but I decided to make some changes for orginal recipe. Instead of oil I used apple sauce and also leave out that green tea and substituted it for vanilla soy milk. I also used only spelt flours insted of wheat flours and adding some rolled oats and wheat germs in dough. I used ilttle smaller amount of sugar because that vanilla soy milk and apple sauce brings also little sweetnes and good flavour.I leave out that topping thing but decided to put one
frozen strawberry inside of each muffin.
I liked how they turned out really tasty and moist!
those apple pieces in dough and in ready muffins.
I think I should bake them again :)

13.1.2008 Bloodred, Tandoori owen creation

One day I make this wery simple Tandoori-tofu thing.
I putt it some carlig, minced fresh ginger, spices:tandoori-masala spise mix, pepper, coriander(also fresh!!), lime juice, parsley, balck pepper, cinnamon and little dash of sweet and sour-sauce from a bottle. Then I sauteed some red-onions with those spices, adding one can of tomato puree and tofus, zucchinis, carrots and 2 red peppers+1 yellow pepper. I leave that infusing for about an hour and finally added some salt and fresh herbs.
It was really good, simple, smooth and spicy!

31.12.07 last post in this year (I think)

This you can see my "home laboratorion" and equipments which I`m using when doing some "scientifical tests" and preparing those cookies in my surgerytable.. Like in hospital, and listening some music during the operation.
I think bands like Aborted and Carcass suits best in those situations when there is lots of strict work needed.. And also few words about this new year selebration conventions: I-HATE-THOSE-ROCKETS and FIREWORKS!!! thanks and happy new year when it comes. Bye.

31.12.2007 THOSE ONCE LOYAL..MUFFINS

Yesterday I decided to made some muffins. Just because I had so much of that green-topping left which I was used to made those decorations in my METAL-CAMOUFLAGE cookies.

So, because I was feeling that at I must need some heavy stuff again I decided to made some deathmetal-muffins..

What the hell is deathmetal muffin? Someone could think. OK, I can explain, its really simple answer: Deathmetal muffins are those muffins which are baked with listening some good deathmetal during that baking proces.
I was thinking hardly which record I would choose to listen and I ended up to choose that great Bolt Thrower`s newest album named "Those Once Loyal". I decide that allso because I haven`t listened it since long time. SO I started to mix ingredients of " those once loyal"-muffins with accompanient of that "ripping your head off"-guitar roaring and "crushing your face down"-bass wall`s(I ecpesially like the music which is really bass-tuned) I think Bolth Thrower is a one kind of music like that! No any useless melodies or other needless clansing "crab"-deathmetal needs no melodies, in it. I really honour their long lasting- work with deathmetal( the band was formed in 1986) but ecpecially their basist Jo Bench who is such a good player and one of the few women playing in a death metal band(and she`s also a vegetarian since 1984!). I really adorn her...

OK, but back to the baking proces. I searched some wery simply and quick recipe from my recipe folder and ended to made some rasberry(recipe calls to use rasberries) muffins, but because I haven`t any rasberries in my freezer I decided to put 1 cup of redcurrants in that dough. I also used more spices and smaller amount sugar than recipe call`s. I used little of that vanilla flavoured powdered sugar mixed with some brown, whole sugat and adding some cinnamon, ginger and bitter orange peel-mince.

Then I putt dough in those little baking tins and stamped them in owen and bake them tender about 15-20 minutes. They turned out really fantastic! Those little guys were really smelling awesome and they ALSO tasted wery good. Not too sweet, because those redcurrants are asidic kind of berries and I don`t put so much sugar in the dough(there was also lighty-vanilla flavoured soymilk and apple-pear puree in it-they also added some sweetenes and good flavour in dough). My littlebrother liked they allso and wanted to pick some with him when he was going out with hes friend.
So I can maybe say those "Bleeding(yep, those redberries looks like blood!!" deatmetal,"those once loyal"-muffins are also kid-friendly stuff ;)
I was doing those decorations with left-over green sugartopping and decorated some muffins with that Chaos eye-pattern which Bolt Thrower uses in their graphics.

31.12.07 Last hours of 2007....

Ok to night is the new years night.
But this is nothing to do with this "Plum soup" ("Luumukiisseli" in finnish) which I have eaten so much during this christmas time.
We, in there Finland used to like those berry and/or fruit dessert fools. This is wery easy and quick to made. In there Finland we used to eat this cinnamon flavoured plumsoup in christmas morning with riceporridge, sugar and dash of soymilk(vegans like me..). I thin this is also wery nice to eat plain, for afternoon snack with a cup of tea or in evenings before goig to sleep.
I really like this simple, but really tasty-kind of dessert. Someone can say it`s not wery nice looking stuff(as you can see in those pictures.. ;) ) but I really don`t care much how it`s looks if its still tastes good! ANd I always like to enjoy my plumsoup with that vanilla flavoured soymilk! Heavenly..

This is simple recipe for this goodie.

200 gr dried prunes
1 liter water
3 tbs(brown) sugar
1-2 cinnamon stick
2 tbs potato starch mixed with a drop of cold water

Cooking and Preparation Method
Rinse the prunes in cold water. Allow the fruit to soak for a few hours in water containing some sugar.
Boil the prunes in the sugar-water liquid until tender.Dissolve the potato starch in a drop of cold water and pour into the soup in a thin stream, whilst continuously stirring. Bring to boil and pour into a serving bowl and allow the soup to cool. Sprinkle with sugar and serve with soymilk or top of riceporridge.

30.12.07 2007 METAL REVELATION

I`m really into metal music-I have been since years one and two I think.. ;)I really love those heavy, slow sounds and ripping electric guitar wals which are chrushing you down with colony of thunder like bass army! And in backround you hear this endless drumm battery smashing your nerves and every senses..
I decided to bring christmas gifts in this year. Not all my friends but those 3 guys who are also into metal and they like same bands as me-so I like decorate gingerbreads with logos of those bands which I also like. No shitty music y`l see?

I made those traditional Finnish- style gingerbreads-vegan ofcourse! And then decorated those large, round ones with logos of those 3 REALLY DOOMING bands. They turned out like great succes, those who got these presents liked them a lot.
And because I sometimes catch the inspiration to try made some things which I haven`t before try to made out I decided to make one test-kind of cookies.. And those cookies are birth just because of that at I was wanting to try how they looks if I made out my planning to try made some CAMOUFLAGE coloured vegan shortbreads, which ofcourse are topped with new band logo-decorations.
These were just test cookies, I like to play with food sometimes and now I was splashing with that green food colouring! Yau! Those camouflage cookies tastes almots chocolate, because that brown-part contains cocoa powder and cinnamon and that white(and green also because green is same as that white but coloured) tastes little like lime, ginger and pear because I used those all when making doughs.
That green frosting is made with vanilla flavoured powdered sugar and that food colouring so it`s makes also little taste of those metal shortbreads.

Left you`l see Morbid Angel one ..

...And right is Napal Death

Left: Cryptopsy

right:Electric Wizard

...And Iron Maiden, because my older brother ask me to made him that one! I think I also like Maiden`s early stuff, my favourite albums are ..hmmm, which of them all is my favourite, difficult because I do like at I like many of those albums.. ;) But I say that first where is still Dianno in vocals is still rocking well!

There is also Nile (if you can see that picture right, beside of that Annihiltaion of the wicked..) And there were Cannibal Corpse one but I eated it with my little brother (who also liked it was tasting good) and my dog(it was quite a LARGE cookie ;)) and listening ofcourse Cannibal Corpse`s music during that..

There is also some strange guys having their
nice, little cookie parties with those one giant,
Electric Wizard cookie..I think this is far much more cookie than those buddies can eat..?
(I have made those clay guys during my lessons with ceramics)
AND there is still one picture which you can see all of those cookies in same time.

3012.07 New year is coming..Some christmas foods

This is my christmas casserolles, traditional Finnish dishes! Those above are made of pureed carrot, syrup, cinnamon, salt, water, crushed bread crumbs and cooked barley(also a little dash of nutmeg and white pepper added. Those below are made of rutabaga, water, breadcrumbs, syrup and same spices as the carrot casserolle has in it.
I definitely like that rutabaga thing really much! I have some of this stuff stil in my freezer, so I can eat it when I want! Even in summer holiday or something..

This is yours ( I eat christmas dinner with my parents and littlebrother this time) dinner settings. You can see there is some green salad in front, marinated shiitakemushrooms by that rightside, above is some mustard-curry sauce made of silken tofu and creamy mushroomsallad made of soyyughurt, mixed salted mushrooms, salt fresh parsley and dash of white pepper. Yuo can also see that seitan-roast behind those mushrooms.

This is marinated tofu(with lots of soy sauce, fresh coriander, parsley, ginger, spring onions and garlic, black pepper, sweet and sour sauce and also some tomatopuree and spices). I baked it in a owen and we eat that as starter in your lunch with homemade springrolls and dipping sauce. It was wery good, I like those Asian-style spices! Behind is sauerkraut(I LOVE it) and green beans straight from jar.. ;)

This is also kind of marinated-bean salad! It was gorgeous, we got the inspiration to made this when we were eating lunch couple a days before christmas in one restaurant which serves only vegetarian food(also serves many lovely rawfood things!) and there were a marinated beansalad like this! We checked which it contains(there is always all ingredients showed in the lists) and then made it home. It was tasted just same like this one which we were eaten in these restaurant. It contains: lot of fresh coriander, parsley, chopped leek, sweet and sour sauce and tandoori masala-spice mixture+little dash of salt and soy sauce. AND sundried tomatoes.

This is your seitan-roast. I made it with one recipe I have writtened in Finnish, but I used also that Bryanna Grogan`s Seitan turkey-recipe when making this. You see, I sometimes will mix those different recipes and then turned them more tasty then. This is really succesfull and I think it`s also great when sliced cold topp of bread. I have still little left in my fridge and freezer.

And the last ones: our dreamlike chocolate-zuchini cake! It was really moist, soft, dark and GOOD! Everyone loved this, and that`s not the first time when my mother
(she is specializing to made this cake!) made it..
There is also used some dryed figs in this time, and because we don`t have that ready bought chrushed nut-mix we used allmond powder instead and noticed it also works.

And more desserts.. Christmas is the time of lots of sweet things.. I love those dryed peaches, apricots, melon bites and apple rings. There is also home made ginger breads(which I have decorated, but saddly there was lots of more those decorated ones befor my dog eat them all during I was out ..). And those little green wasabi chicpeas are one present I got from my mother.

8.11.2007 SOME food now..

this is small post for my cookings which I have done since last weeks..

I found this recipe ( http://http://blog.fatfreevegan.com/2006/05/cabbage-nori-rolls.html ) for cabbadge nori-rolls in Susan`s great blog and I love it!

This is picture of my littlebit "fake japanese" lunch, including some tofu-vegetable stirfry and norirolls+ wasabi, gari and soy sauce for dipping(that teabag-holder is my soy sauce cup..) and also some asparagus served with sweet & sour sauce(staight from bottle..). Wery nice salad combination in this time. I like nori-seaweed so much, but I`m not good to invent some new recipes where I can use it.

So, if anyone have good tips for using more nori in cooking,
come on and post yur tip in my blog! ;)

6.11.2007 First snow..Beautines of great, mighty nature.

Hello! This is first time in this month when I post something in this blogger.. I had feel little tired during the last weeks, because of that at days are getting more darker and weather is getting colder..

SO I hope the snow rains fast and makes nature outside looks more lighty.

But in last sunday there was raining little snow! I wakeup in morning and looking out window when I noticed that and I feeling I must go out to take some photos and enjoying the beautifull, sunny day with my dog friend Nelli.
We walked long time in field and I took some nice photos of frosty trees and plants.. Nature is the most beautiest thing I know!

There is also photo for Nelli, she is over 8 years old now and I really love this sweet, fluffy friend. This is also picture which I have drawn her in year 2006.
Not any food things in this post, but its not important ;)

3.10.07 Summer memories

I was in Krakow,Poland in last summer holiday. That 3 days trip was my birthday gift for my parents and I have great time in there.. Lots of beautifull, old buildings and nice museums which I visited. And lovely atmosphere and also..Nice and CHEAP vegetarian restaurants, which also have many vegan options on their menus.
I have this sorbet in one nice, little cafe middle in green park in Krakows centrum. We visited in this cosy cafe couple of times and everytime i ordered wonderfull (and cheap) vegan sorbet portion, with lots of fresh berries! And they make also that funny serving as you can see ;)

And this is ONE of my birthday caces(It was so Good!) which i was bake in my birthday parties in August. There was also lovely chocolate truffle cace(see my resent bloggins..) and berry tofu-icing, vegan cinnamonrolls and lots of other little and bigger vegan treats.. Everyone of my guests liked it!

..And one photo of great summer salad and there is also my beand spread and marinated carrots, with carlig vegan margarine and soy yughurt sause and tasty baguettes and homemade buns(including carrot and herbs+ sundried tomatose, made with wolewheat spelt and rye flours!). The main course (which I don`t have picture, sorry!) was lentill Goulash served with brown rice. That combination works! I have nice parties..With nice sunny weather.

17.6.07 Yes,goats ARE cool, not food..

Yes, I like photographing and I like goats! They are fancy animals and looks cool with their horns and "mystic" eyes.. Little "evil" looking guy,eh ;) I have photographed lots of nature and animals, also in this summer but that photo is from last summer
when I was photographing( also goats..) animals in local farm near my house.

17.6.07 Seitan Wörship- Evil goat cult picnic 2007

When my summerholiday was begining we have onekind of "morning brunch-contest".
Your school`s students have a small groups with different themes. Me and my two friends decided to put up the "Goat picnic" which were including metal music, "seitanic"vegan goodies and mystic, dark atmosphere... Your meny was quite simple: "pizza baguettes, which I made(they were like stuffed baguetttes including "pizza"seasonings, carrot, zuchini, onion and garlic with tomato sauce and fresh herbs..They were wery tasty!), grilled seitan ribs(those pork lookig things alongside the grapes in the silver plate), marinated carrot coins(you find recipe here: http://vegweb.com/index.php?topic=13971.0), green sallad with mushrooms,
sundried tomatoes and wild greens like ground-elder (Aegopodium podagraria) and
Dandelion(Taraxacum), stuffed zuchinis and tomatoes, carrot, zuchini and cucumber sticks for dipping and curried soy-youghurt dip+ chili-spiced tomato dipsauce, plum pie and plum soup for dessert, vegan candies, grapes, raisins and dried apricots.
Drinks we have "Blood"=tomato juice and burk of "Narcotic saft" which was a new theme matching name of strawberry juice..

That picture you can see your "seitanic goat altar"..
We have human skull(he have a mystically smelling "sacrifice" Incense in hes mouth..), "altar picture with goat skeleton holdindg two sacrificial knives, big, black upsidedown turned krusifix with goat-pentagram picture and ofcourse CD-player and lots of good goat-metal music records! Your bruch "music meny" includes for example bands like Archgoat(http://www.archgoat.com) , Goatsnake (http://goatsnake.tripod.com/), Goatwhore(www.goatwhore.net/), Darkthrone(http://www.darkthrone.no/), Celtic Frost(http://www.celticfrost.com/), Reverend Bizarre(http://www.reverend.shows.it/) and Electric Wizard(http://www.myspace.com/electricwizarddorsetdoom).

"Wild green sallad". Including dandelion and ground elder. Funny thig is that at in finnish language that name "ground elder" is "Vuohenputki"which straight description in english is like "goat`s tube".. ;)

My picnic plate!
