27.3 Seitan is GO(o)D!


Yeas, I have been vegetarian some about 4 and half years, and last 2 and half years I have been vegan. One of my favourite foods is SEITAN(if you don`t know what is it go check this link http://www.wikiveg.org/Seitan). Seitan is wery easy to made with pure gluten flours, but I first time made my own seitan "steaks" on last week(when I have a holiday and littlebit extra time to use..). Seitan is made by removing the starch and bran from flour, leaving only the gluten, and adding seasonings. So, because I like wery spicy food I made wery spicy seitan slices and put them in somekind of BBQ marinade.. They tastes wery good! I`l be back and adding the recipe of my seitan and something what I try to remember recipe of my BBQ marinade.
Recipe what I using to made my
seitan steaks
You need:
1 1/2 cups vital wheat gluten flour
1/4 cup nutritional yeast flakes
1 cup very cold water
2 cup soy sauce
1 tablespoon tomato paste(I using chili ketchup, it adds good, spicy and little sweet flavour)
2 cloves garlic, pressed
teaspoon finely grated lemon zest
Simmering Broth
10 cups water
2 cup soy sauce
some herbs like oregano,basil,thyme...
some other spices( I think I was using some chili and black pepper?)
In a large bowl, mix together Vital Wheat Gluten Flour and nutritional yeast flakes.
In a seperate bowl, mix together reamining ingredients: water, soy sauce, tomato paste, garlic and lemon zest.
Pour the wet ingredients into the dry and combine with a firm dough, knead dough for about 3 minutes until a spongy, elastic dough is formed.
Let dough rest for a couple of minutes and prepare your broth, don't start boiling brought yet. Now roll your dough into a log shape about 8 inches long and cut into 3 equal sized pieces.
Place the pieces in the broth.
Cover the pot and bring to a boil.
When the water has come to a boil set the heat to low and gently simmer for an hour, turning the peices every now and again.
Let pieces cool in the broth because seitan is best if it cools completely.
Now you can made some steaks, or smaller lices/pieces and put them in to some marinade if you like...
BBQ-marinade for seitan
1 cup water
1/2 cup soy sauce
3 tablespoons tomato paste or (chili)ketchup
2 tablespoons sweet chilisauce
2 teaspoons black pepper
1 teaspoon ginger
salt
some herbs if you like
Mix all ingredients in some bowl, taste and if it`s tastes good put seitan steaks in marinade, leave them marinade over night in cool place.
